The raisins represent the time I dragged my friends and mom to supermarkets all across the county just for "baking raisins", which are just raisins soaked in water that are more expensive than plain raisins. At the time, I was obsessed with getting my mom to make pancakes by putting ingredients like fruits or baking chips into the batter. Sadly, this obsession ended when she got sick from pancreatic cancer in my senior year of high school. Now I know today that plain raisins are sufficient for baking food.
The curry powder represents the time I visited my dad's workplace, which is a local university that was later my alma mater. The university had an Asian restaurant on campus and that was the location of my first exposure to Indian food. I don't remember which type of curry I ate, except for two facts: 1. I didn't eat any white rice with the curry(they didn't have brown rice). 2. The curry was so spicy I had to drink 7 bottles of water to satisfy my burning mouth.
Moral of the story: Always have rice or some sort of carbohydrate with curry.
Anyways, enough reminiscing. Here is the recipe. You will need:
1/2 onion, sauteed in olive oil
2 eggs, beaten
1/3 cup raisins
1/2 cup of a crumbled up banana nut muffin(note: muffins vary in size but I used a pretty big muffin and only used half of the muffin itself)
1/2 cup of crumbled up Pizza Goldfish(approximately 100 goldfish)
1 tablespoon of curry powder
Pinch of salt
1 pound of extra firm tofu, chopped
Nonstick Cooking spray
1. Wash your hands.
2. Put first first 8 ingredients in large bowl.
3. Mix up the ingredients using a big spoon to get your meatloaf mixture.
4. Spray nonstick cooking spray onto lasagna pan.
5. Form two loaves from the meatloaf mixture on the lasagna pan.
6. Put in 350 degree Fahrenheit oven for 40-45 minutes.
